Preheat the oven of 4
Preheat the oven to 200˚C, (180˚C for fan ovens) Gas Mark 6.

Heat a large stove-to-oven pot or a large frying pan and fry the diced lamb and onion until the meat is sealed and the onion is caramelised. Add the garlic and ginger and continue to cook for a minute.

Add the harissa paste and stir until the ingredients are completely coated. The spices should be creating an incredible aroma now.

Add the chopped tomatoes, drained chickpeas, and stock. Give the dish a really good stir. Cover the pot with a lid (or transfer the tagine to a casserole dish with a lid) and cook in the oven for 1.5 hours or until the lamb is tender. Stir the tagine after 45 minutes and add the apricots.
